Cook the sushi rice according to instructions on packet.
After the sushi rice is done, add 2 tbsp of sushi vinegar and leave to cool.
Cut cucumber into strips.
Spread sushi rice evenly onto a piece of nori and lay cucumber and salmon slices on one end of the nori.
Roll the nori starting from the end with fillings.
After done, cut the sushi into 6 pieces and serve with soy sauce.
