Preheat your grill or griddle. Place you chorizo, peppers and onions in a frying pan, and gently fry in olive oil for approximately 7 minutes.

Whilst frying, place your Panini and sliced halloumi into the griddle until lighty toasted.

Fill the pannini with the roasted peppers and onions, halloumi, tomato and rocket leaves.
