This was my son's first attempt at making spaghetti bolognese and it turned out very well and tasted wonderful.
Put small amount of olive oil in frying pan. Chop onion and carrot very finely and add to pan along with crushed garlic. Sweat until translucent. Remove and put to one side on a plate. Add mince to pan and fry gently until brown. Add carton of tomato passata and carrot and onion and garlic and dash of red wine. Cook together for 5/10 mins. Add little oregano and seasoning to taste.
Meanwhile, add cold water to saucepan together with a little salt. Bring to a rapid boil and add enough spaghetti for 3 people. Cook until al dente and check that the mince mixture is thoroughly cooked through.
Drain spaghetti and divide into 3 portions. Add bolognese topping and sprinkle parmesan cheese on top. Serve immediately.
