Add olive oil to a large heavy-bottomed pan.
Heat and add onion/carrot/celery and saute for approx 10 mins until soft.
Turn up heat slightly and add mince. Cook until mince has browned all over.
Add 1 lite of boiling water to your beef stock cube and stir.
Add your tins of tomatoes, dried oregano and beef stock. Stir until everything combined nicely. Add salt & pepper to taste.
Reduce heat to a simmer. Put on lid and allow to cook for approx 1hr - 1hr 15mins.
When sauce almost ready. Heat a pan of salted water. Once boiled add dried spaghetti and cook according to packet instructions.
Once spaghetti ready, drain it in a colander and add it to the pan of sauce. Stir through to coat nicely.
Serve up into pasta bowls and add grated parmesan (if desired)
If your pasta becomes 'sticky' add a few drops of olive oil and stir through.
Any leftovers can be frozen for another time!
