Heat the oil in a large heavy based pan and fry the onion for a few minutes, to soften,
Add the garlic and mince, fry until brown.
Stir in the thyme and oregano and season.
Cook til brown and then add courgettes and mushrooms.
Pour in the tomatoes.
bring to boil and simmer for 20 mins until the meat is tender and cooked.
Cook the spaghetti according to pack instructions.
Serve with Parmesan and a side of yogurt.
Substitute 1 of the cans of tomatoes for 300ml (1/2pt( beef stock if you prefer. Try adding a splash of Worcestershire sauce.
