Cook spaghetti in boiling salted water for approx.12 minutes until al dente
While spaghetti is cooking, in a small pan, just cover the pancetta in extra virgin olive oil and fry until slightly brown and crispy
Drain spaghetti and return to pan
Meanwhile beat the egg and stir in the grated parmesan until smooth. Add salt and pepper
Making sure oil and pancetta is sizzling, add to spaghetti and stir to coat all the pasta
Add the egg & parmesan mix to the spaghetti stirring vigorously until the pasta is thoroughly coated in a creamy looking sauce
Allowing the cooled spaghetti to sit while preparing the eggs and reheating the oil and pancetta, prevents the eggs from curdling and sticking to the pasta in lumps and ensures a smooth, delicious sauce
