Slice the Chorizo Saucsage, Red Onion, Peppers and Garlic
Add the Olive Oil to a Large Cooking Pot, Add the Onion and Chorizo, Fry till the Onion Browns slightly
Now add the Chicken Thighs & Chicken Drumsticks Mix and leave to fry till the Chicken turns Golden
Now add the Garlic and Pepers and allow everything to fry for a further 10mins
Place the tinned tomatoes into the pan, give everything a good stir then place a lid over the Pan and Cook until Chicken Thights are Cook through.
If the Sauce become dry add a splash of boiling water into the pot
Serve with Long Grain White Rice onced cooked and garnish the plate with chopped Parsley.
Serve with a Lemon Wedge you can also add Olives
