Place the mozzarella in a small mixing bowl and season with the red chilli flakes and crushed coriander seeds.
Spoon the melon balls into a serving bowl and then arrange the mozzarella next to them. Drape slices of the Serrano ham over the top of the melon and mozzarella. Serve chilled.
