Pre-heat the grill to medium-hot.
Combine the red pepper and Serrano ham in a large mixing bowl. Spoon evenly on top of the slices of bloomer, then sprinkle the grated cheese on top. Grill until the cheese has melted but not coloured.
Remove and arrange on serving plates.
Garnish with a few mixed leaves and a sprig of dill before serving.
