Heat oil and stir-fry onion & garlic for 3-4 mins till soft
Add pepper & courgette and stir-fry for 2 more mins
Stir in chilli, tumeric and rice and stir-fry for 2-3 mins
Add stock, wine (if using), tomatoes and black-eyed beans. Bring to boil then reduce heat, cover and simmer for 10 mins.
Stir in peas, sage and season with salt and pepper. Simmer for another 5 mins until rice is tender.
Sprinkle with parmesan and serve straight away.
Wine is optional. You can also add chicken or prawns if you want some meat,
