This is something my husband cooked for me one Valentine's Day.
Preheat the oven to 200 degree c
Toss together the Oil, zest, chilli, and seasoning
Cut carrots and parsnips lengthwise into long, thin strips.
Toss the tossed oil with carrots and parsnips, and place in an oven proof dish with the garlic cloves.
Cook for 30-40 minutes or until vegetables are tender and browned, being sure to toss every 10-15 minutes to ensure sufficiently oil-coated.
