Mix 600g minced beef steak with 1 crushed clove garlic and 1tsp paprika, season and form into 36 balls. Keep 12 aside and freeze for another time. Chill the rest for 15 minutes in the fridge to firm up.
Meanwhile heat 1tbsp oil in a frying pan and cook ½ chopped onion over a medium heat for about 8 minutes, until softened, but not browned. Put 200g couscous in a bowl and pour over 150ml boiling water, cover with cling film and leave to steam for 5 minutes.
Heat a grill to high, thread the meatballs onto 8 skewers (3 to a skewer) and grill for 4 – 5 minutes per side, or until cooked to your liking. Stir the onion into the couscous along with a little chopped coriander and serve with the grilled meatballs.
