Ingredients

  • 1 tin pear halves in syrup​
  • 2 tbsp granulated sugar​
  • 3 lemons, rind peeled into thin strips and juiced​
  • 3 egg whites​
  • 300ml Seedlip Spice 94​
  • ice cubes, to serve​

If you don't have any pears, try using apples

Method

  1. Start by bending the lemon rind strips into 6 curls. If you want very curly, wrap around the handle of a wooden spoon and use blue tac to secure. Set aside while you prepare the cocktail.​ 
  2. Using a blender, blitz the pears and syrup from the tin with the sugar to a smooth puree. Add the lemon juice in batches, tasting after each addition. Depending on how sour you like your cocktail, you may not need it all. Then add the egg whites and Seedlip Spice. Blitz again to combine.​ 
  3. Place a handful of ice cubes in each glass, then pour the cocktail mixture through a strainer in the glass. Serve with a curl of lemon rind.
