This dish is a great on its own or as an side dish
Wash the rice for a few minutes in warm water and then drain.
Heat the oil in a large pan and add the cumin seeds, cloves and cardamon pods. When the spices start to crackle tip in the washed rice and gently toss for 3-4 minutes over a moderte heat, add the whole beans, 1tsp salt, the saffron and 500fl oz water.
Once brought to the boil, lower the heat and cover and cook for 5-8 minutes or until water is absorbed, fluff up the rice with a fork and garnish with the toasted almonds.
