Place a small frying pan over a low heat, add the cloves and cinnamon and toast gently until they release their aroma. Take off the heat and leave to one side.
Mix rest of the ingredients in a bowl. Crush cloves and bruise cinnamon, leaving it in one piece, and add to the bowl. Stir well and leave for at least half an hour.
Check seasoning and add a little extra lemon or sugar if necessary.
