Using a large blender / food processor, blend washed mushrooms and peppers (remove stalk and seeds), tin of tomatoes, tomato puree, 4 garlic cloves, an onion, oregano, basil and dried herbs. Blend until smooth.

dice 1 x onion and crush 2 garlic cloves and heat in a large saucepan with the Olive Oil until onions begin to sizzle.

Add the lean mince to the pan and then crumble the 3 oxo cubes over the whole lot. Mix well. Gently brown the mince and cook through.

season the cooking mince with salt and pepper. Fresh ground if possible.

Pre-heat the oven to 200 degrees (180 fan oven) while the mince is browning.

When all the mince is brown, reduce to a medium heat and add the blended vegetables to the saucepan. Bring to the boil then simmer gently for 10 mins to allow some reduction in the sauce.

Once the Sauce is ready transfer to a large oven dish suitable for lasagna. A heavy dish is preferable. Layer meat sauce first then arrange 4 sheets over the top then more meat etc until all the lasagna sheets and sauce are used. Make sure the sheets are all hidden by adequate sauce to allow them to absorb the right amount for water etc.

Add the chosen white / Bechmel etc to the top and spread evenly. Place in the oven for 30 minutes in the centre.

Finally add the 150g Grated cheese and cook for another 15 minutes. If you like you can garnish the cheese with black pepper and parsley, but optional.

Remove from the oven and rest for 10 minutes. Serve with your chosen accompaniment such as salad or chips.

Blending until smooth gives you a sauce that the kids wont realise there's vegetables in :)
