I have grown up eating this dish. My mum used to stuff the bread with leftovers and it used to taste amazing.
Peel the carrots and potatoes and dice them. Also cut brussels sprouts into quarters. Give them a good wash.
In a hot pan, pour the oil and then cumin seeds, turmeric, ground coriander, red chilli powder and salt.
After 30 seconds add all the vegetables and stir well.
Add 100ml of water and cover the pan. Let it cook for 15-20 min stirring 3-4 times while cooking.
Once all the vegetables are soft, take the pan off the heat and add garam masala and dried mango powder and stir well.
Serve it with naan bread to enjoy it to the full.
