Heat the oil in a large pan and gently fry the onions, carrots, potatoes and garlic for a few minutes, until they are beginning to soften but not colour.
Add the stock and bring to the boil, cover and simmer for 20mins until the carrots and potatoes are well cooked.
Use a stick blender to create a smooth soup. Mix in the spices and crème fraîche.
We like to serve ours sprinkled with a little grated cheese.
