Spicy Chicken Rice

Dice chicken and marinade in 1tbsp of cajun spice. Chop peppers and courgettes into small chunks. Slice the mushrooms and drain the sweetcorn.

Heat half the oil and cook the chicken for 5 minutes. Remove and keep warm. Heat the remaining oil, add the vegetables and remaining cajun spice. Cook until the vegetables are just tender and the mushrooms cooked through.

Cook rice in the microwave for 2 minutes. Add chicken and rice back into the pan with the vegetables and warm through for 1 minute.

Serve in a big bowl and tuck in with a fork. Yummy, healthy, fast and great for a quick tea with friends and a natter!
