Put the Chana Dahl in a pan with 350ml/ 12 fl oz water. Bring to the boil and simmer for 20 mins until tender.
Heat olive oil in a heavy based pan. Add the onions and cook for a few minutes to soften. Stir in the garlic, green chilli and ginger. Cook for one minute.
Add ground chilli, cumin, courgettes, and green pepper and cook for 10 minutes until tender.
Season, stir in the Chana Dahl and fresh coriander to serve.
