In a big pan add water and season with water and let it boil - meanwhile prepare potatoes and add to boiling water for 3-4 mins until half cooked then strain the water and let the potatoes cool.
In a medium size bowl put the potatoes and mix all ingredients add 2 tbsp water as it helps bind wall ingredients together. Then put in the fridge for 30-45mins for cooling.
then take the potatoes out and sprinkle with 1tbsp cornflour and deep fry until golden brown in colour. serve hot with chutney or ketchup
If making gluten free add rice flour instead of all other flours and follow same recipe.
You can prepare the recipe in the morning or day before and leave in the fridge just fry before serving.
