Spicy Indian Style Potato wedges

In a big pan add water and season with water and let it boil - meanwhile prepare potatoes and add to boiling water for 3-4 mins until half cooked then strain the water and let the potatoes cool.

In a medium size bowl put the potatoes and mix all ingredients add 2 tbsp water as it helps bind wall ingredients together. Then put in the fridge for 30-45mins for cooling.

then take the potatoes out and sprinkle with 1tbsp cornflour and deep fry until golden brown in colour. serve hot with chutney or ketchup

If making gluten free add rice flour instead of all other flours and follow same recipe. You can prepare the recipe in the morning or day before and leave in the fridge just fry before serving.

  • 8-10 Baby potatoes - peeled and cut in thin wedges
  • 2 1/2 cups water
  • 1 1/2tsp salt / to taste
  • 1/2 liter oil to deep fry
  • 1/4 lemon/lime
  • 1/2tsp turmeric
  • 1/2tsp cumin and coriander powder
  • 1 1/2tsp red chilli powder
  • 1/2tsp dried mango powder(optional)
  • 1/2 tsp chat masala(optional)
  • 1/2tsp garam masala
  • 8-10 leaves mint finely chopped
  • 1/2 bunch fresh coriander leaves finely chopped
  • 1tsp ginger & garlic paste
  • 1 tbsp Cornflour + 1 tbsp for sprinkling
  • 1tbsp gramflour
  • 1tbsp Self raising flour
