One from my mum. She always made too much mash so that she could have these treats herself the next day. She just added onion but I've spiced it up a bit.
Fry off the onion, red pepper for 3 to 4 minutes
Combine all ingredients in a bowl, mixing steadily with a fork
Add some Rapeseed oil to a frying pan. Make 2 or 3 quite thin cakes from the potato mix and fry gently for at least 7 minutes on one side. The base should be going crispy. Lift the cake gently to check. Once crispy turn it carefully with a broad spatula and do the same with the other side. Serve with pork or lamb chops, steak, chicken filets and salad
Don't hurry to get them from the pan. Let them cool a little before eating.
