A Warm spicy soup that is excellent served with warm crusty bread as supper on a cold snowy day. Even better with a glass of white wine.
Melt butter in large saucepan over medium heat. Fry the chopped onions in the saucepan until soft.
Add parsnips, garlic and curry powder and fry for 2 mins to release flavours. Mix boiling water with stock cube and add to saucepan. Simmer for 15 minutes until the parsnips are soft.
Take off heat and blend with processor. Stir in cream and warm through, season to taste and garnish with paprika.
