It is a great stable meal to do mid week
Fill large pan with boiling salted water and drop pasta in and boil according to instructions.
In a large pan, heat oil and brown the red onion for 5 minutes then add garlic and dried herbs and chopped up pepperoni. Stir for a few minutes and add the remainder of the ingredients, except the cheese. Season to taste.
Drain pasta and add to the sauce.
Pour into a serving dish and sprinkle cheese on the top, then grill if you prefer melted.
Good served with some garlic bread and salad.
Quick and easy dish, you can vary what you put in. For example, add some sliced peppers and no sausage for a vegetarian option or add meatballs to beef it up.
I like to use penne pasta with the sausage and spaghetti with meatballs.
