We love the humble prawn cocktail - it's fun, retro and the perfect start to any dinner party. In the Nolan household it's a treat saved for Christmas Day, but frankly it's perfect whatever the season. We've added some spice to give our take on this dinner party classic a bit of kick...
First, make your sauce. In a small bowl combine the salad cream, ketchup and the juice of two limes and mix well. Add the finely chopped chilli (remove the seeds if you want to make it milder) and mix again. Set aside.
Divide the shredded lettuce and watercress evenly between four large wine glasses. Add a layer of prawns in each being sure to reserve 4 for decoration, then a large dollop of the sauce. Scatter in the chopped avocado and mango, being sure to divide it evenly between the glasses.
Finish with another layer of the shredded lettuce and watercress and top with another dollop of the sauce before garnishing with the reserve prawns and a lime wedge for each glass. Enjoy!
