Pumpkin soup with a twist bought over from australia.
Add the cooked pumpkin seeds to the top for flavour or as a simple snack.
Add a little olive oil in a large saucepan, add the finely chopped onions, garlic and ground chilli flakes and cook for 5-8 mins, until the onions soften.
Add 1kg peeled, deseeded and chopped pumpkin to the pan, stirring occasionally until it starts to brown and soften
Add 750ml Knorr vegetable stock into the pan, then season with salt and pepper.
Simmer for 10-15 mins until the pumpkin is soft
Purée with a hand blender and finishes off with adding a pot of cream
Cook the pumpkin seeds to snack on after.
