Oven heated at electric 175.Peel and core parsnips and boil them until just tender about 10 mins then.rub them in olive oil and roast for about 20 mins or until roasted colour. While roasting heat in pan 1tlb olive oil and add all dry ingredients cook through and leave off heat until parsnips roasted then add them to pan return to heat and when mixed add stock leave to simmer for 20 mins. Take off heat leave for 5 mins and then whizz adding Parmesan cheese ...Enjoy

I always core my parsnips so its only the sweet flesh used.
