Pre-heat oil in a stockpot, and gently heat the finely chopped onion and garlic until golden.
Add roughly chopped sausages and keep them moving in the pan.
Once sausages are lightly browned add chopped tomatoes, herbs, chilli and tomato puree - place lid on stockpot for 20 minutes. Add peas, and take lid off stockpot and reduce for another 10 minutes.
Boil a seperate pan of water and add pasta until a la dente.
Add reduced sausages & sauce to drained pasta. Finally add the grated Parmesan and black pepper to taste - enjoy!
Don't overcook the onions or garlic, and ensure the sausages aren't cooked too quickly - this means they are juicy and tasty. Also ensure the sauce is properly reduced so it isn't too sloppy.
