My husband and I have been cutting down on the amount of meat we eat and a veggie friend told us to try these burgers. I promise they are better than beef burgers!
Finely chop the nuts and chickpeas in a food processor
Fry carrots, onion and garlic in oil until soft, then leave to cool.
When cool add rest of ingredients to vegetable and nut mixtures and bind together with egg. Pop in fridge for 30 minutes
Divide into about 10 balls, then flatten into a burger shape. Put back in fridge for an hour.
Oil a baking sheet, put on bbq. Cook the burgers on the sheet for 20 minutes, turning once.
Serve on fresh baps with lettuce, red onions and ketchup. Yum!
