Add butter to saucepan and add onion, all spices and fry till soft. (5min)
Add diced veg and mix thoroughly and cook for further 3-4mins
Add water and stock and bring to rapid boil,
Reduce heat and cover and simmer for about 25 min
Drain through colander into bowl keeping liquid
Blend veg into smooth pulp slowly adding drained liquid until all incorporated.
Re heat and serve with dollop of crème fraiche
Tastes really velvety.
Taste once blended as comes across as too spicy before blending.
