This is a firm family favorite especially as it has a nice spice without too much heat.
Spray a large saucepan over a medium high heat with low calorie spray. Add the onion and leek and fry until softened.
Add the lentils, sweet potato, garlic, cumin, turmeric, paprika,and tomato puree and stir to evenly mix.
Add the stock and tomatoes. Bring to the boil, then lower the heat and simmer for about 40mins until lentils are soft.
Season with salt and pepper, mash if a smoother consistency is desired.
Serve with a spoonful of fat free natural yoghurt.
Use pre-cut onions to save time. Remember to soak lentils.
