I was testing out the Tesco Ingredients Spicy Mexican Fajita Paste with Sour Cream and was delighted with the results. Why not give it a try.

Preheat the oven to 180 degrees Prepare the meal by washing and chopping the potatoes into chunky chips. Place on a baking tray, sprinkle with olive oil and cheesy chip seasoning and mix well. Place in the oven

Chop up the onions and peppers and place in a frying pan with a little olive oil, stir fry on a high heat for roughly 3-4 mins.

Add the Quorn chicken pieces to the pan and a little more olive oil if necessary, keep stiring and cook until all the contents start turning a golden brown.

Add the Tesco Ingredients Fajita Paste to the pan and coat the chicken and vegetables by mixing in well. Stir frequently and cook until the food is piping hot.

Bring the pan to the table and fill the tortillas with the Quorn chicken and vegetable filling, cool down with a good dollop of Sour Cream and grated cheese. Add a little salad to add some more texture and flavour.

Take the chips from the oven when they are crunchy and golden brown. Place in a bowl on the table to share or dish up onto the plates.

Sit back, relax and enjoy... I know we did.

Try and get the chips roughly the same size so they cook as evenly as possible. Use real chicken pieces if preferable but remove the vegetables from the pan before browning it, and add the vegeatables back when cooked through. If the Fajita Paste is a little too spicy add a little water or a little Passatta. Warm up the Tortillas in a pan or foil wrapped in the oven if preferable. Serving Suggestion - Prepare a nice colourful salad to add to the fahitas and make more of a meal. Add a nice Salsa to add a bit more flavour or extra spice if you choose a hot one.
