This is a twist on a Jamie recipe.
Turn on the oven to 200 degrees. Wash the cauliflower and divide into florets.
To make the cheese sauce, mix the creme fraiche, most of the cheddar (reserving a good handful for topping later) and the mustard in a glass bowl which will sit over the large pan in which you will cook the macaroni and cauliflower.
3/4 fill the large pan with boiling water, then add the macaroni and cauliflower; boil for about 13 mins with the sauce bowl sitting on top so that the mixture melts, stirring occasionally. Keep a close eye on the water in case it bubbles over.
Meanwhile, wash the spinach and chop it roughly. Stir it into the sauce so it wilts. Slice the tomato quite thinly and set aside.
When the macaroni and cauliflower are cooked, drain them well and tip them into a wide, shallow oven dish.
Add the sauce and the spinach and stir to combine them. Top with the sliced tomato in a single layer and finish with the remaining grated cheese.
Finish in the oven for about 30 mins until the dish is bubbling and the cheese topping is golden. Great served with peas or steamed fine beans.
