To make the pastry, cut the butter into cubes and rub it into the flour between your fingers. Sprinkle in the salt and mix well. It should resemble breadcrumb texture at this stage. Add a little cold water at the time to help the dough come together. Once its in a ball, roll it up in clingfilm and refrigerate for an hour.
To make the filling, finely chop the cooked spinach and crumble in the cheese. Add the eggs and mix well. Season wiith a little nutmeg. It should be seasoned enough as the feta is quite salty.
Roll out the chilled dough and rustically fit it into a lined cake tin. Spoon into it the filling and let the pastry edges flop, or crimp them neatly if you wish.
Bake in a preheated oven at 200°C for 40 minutes until the filling has set.
It is equally delicious hot or cold.
