Spinach pies (h)

Sweat the spinach in a frying pan with a knob of butter on a medium heat for 5 minutes and drain. Mix all the ingredients into a paste with a large spoon, excluding the filo.

Open the filo pastry flat and roll, if necessary and cut into approximately 5-6cm strips. Add 1 tablespoon of the mixture on to the base of the filo strip and lightly brush the top half of the filo strip with olive oil.

Start to fold the filo strip from the bottom into triangles or right angles upwards into parcels, similar to a samosa shape. 

Place on a baking tray lined with nonstick baking paper and bake in a pre-heated oven at 200°C/400°F, Gas Mark 6 for 15 minutes, until golden brown or deep fry in oil for 4-5 minutes.

To serve, lightly garnish with salad.
