Spooky Witch's Cauldron!

This is perfect for Halloween and the grated ginger makes it a lovely warming meal for autumn nights! Also a great way to get kids to eat some healthy vegetables!

Pre-heat the oven to 200°C. 

Cut a 'lid' off the tomato and scoop out the inside. Carve out a simple scary face and then place in the oven for 20 mins.

Heat the oil in a pan. Cook the onion, pepper and ginger until soft (usually around 5mins). Pour in the stock and bring to the boil. Cover and leave to simmer for 12-15 minutes until cooked.

Whilst the tomato and rice are cooking, carve a spooky skull face onto the mushroom.

Drain the rice and spoon into the tomato, allowing a little to spill out onto the plate, replace the tomato 'lid'.

Nestle the chicken leg alongside the tomato and decorate with the mushroom. Serve and enjoy!
