Put a pan of water on to boil. While it's heating up, quarter the brussels sprouts.
Add the stock cube to the boiling water, stir to dissolve. Then add the sprouts and boil for 5-10 minutes.
Chope the onions and bacon, and fry until the bacon is crispy.
Drain the sprouts. Place in an oven safe dish. Add the bacon and onion mix and the creme fraiche. Stir to mix. Top with grated cheese and brown under a hot grill.
Serves two as a light main, or four or more as a side dish. Mushrooms would also work well if fried with (or instead of) the bacon.
