Cut the bottoms off the sprouts and remove the outside leaves. Slice the sprouts finely.
In a dry frying pan, over a low heat toast the pine nuts. Shake the pan a couple of times to colour them all over. Put pine nuts to one side.
Next fry the pancetta cubes, until crispy. Put to one side with the pine nuts.
Add a small amount of oil to the frying pan and stir fry the sprouts, if they start to catch add a little water. When the sprouts are starting to soften, after about 3 minutes, add the pine nuts and pancetta to the pan. Stir through and serve.
