It has been a favorite in our family for 5 generarations. Although when my mum made it it was steamed in a saucepan for about 2 hours.

Mince the bacon and onion.

Mix flour and suet into a pastry, roll out to a swiss roll shape and lay the bacon & onion mix all over the pastry. Sprinkle chopped parsley over the whole filling, wet all the way around and roll up like a swiss roll.

Wrap in grease proof paper then in a cloth, place into a large steamer and steam for 40 minutes.

I find this is a quick and cheap meal made from leftovers, served with potatoes and green veg with a nice gravy.

Tip

Don't worry that the cloth gets wet it helps to keep the suet pastry moist.
