Roughly chop the tomatoes. Heat the olive oil in a large, heavy-based saucepan over a low heat. Add the garlic, tomatoes, green pepper and spices along with a little seasoning. Cover with a lid and allow to simmer for 25-30 minutes, stirring occasionally until soft and but not broken down.
Remove from the heat and adjust the seasoning as necessary. Spoon into serving bowls and serve.
