Chicken thighs- boned- leave skin on and cut info about three pieces - fry until nearly cooked
Boil new potatoes until cooked (save water)
Put into roasting pan and smash some but leave some whole and drizzle with good olive oil.
Good amount of tomatoes - Jamie used different types but I just used baby toms skinned (jab the skin first with a knife then drop in potato water after they have finished boiling, for about 45 seconds)
Add toms to potatoes in roasting pan with chicken and garlic Also more oil, oregano.
Bake quite hot oven until slightly charred.......Add a little rocket with dressing of your choice.
