Heat a wok or large frying pan over a high heat and add the oil. When smoking, add the garlic, ginger, and spring onions and stir-fry for about 20 seconds, then add the mushrooms.
After 30 seconds add the remaining ingredients, except for the sesame oil, and season. Stir-fry for 5 more minutes until the mushrooms are cooked, then stir in the oil.
