Soak the mushrooms as directed on packet

Prepare the mushrooms and peppers by slicing to the same length, add together into a bowl and set aside.

Marinade the beef slices in the oyster sauce, corn flour and 2tsp of water for 15 mins.

Heat some oil in a wok over a medium heat and add the marinated beef slices and fry for 3 mins, then remove and set aside. If the wok is dry add some more oil and start to stir-fry the ginger and spring onions until tender.

Add the peppers and mushrooms and stir-fry for 2 mins before returning beef slices to wok. Add 1tbsp of oyster sauce to the beef mixture. Toss thoroughly and serve.

For the egg fried rice, the rice should be cold before frying, beat the eggs with a pinch of salt, heat the oil in a preheated wok and add the eggs and scramble. Add the rice and stir, then add the remaining salt and peas. blend well and serve.
