I discoverd this recipe whilst on a camping holiday. Having no cooker and just two camping hobs to cook with my family were begging for something other than pasta or beans for dinner! I decided to try my hand at something I had only previously sampled in a tapas bar and was delighted to be able to recreate the recipe using the tools at hand. The beauty of this dish is the simplicity and the joy of being able to cook it (almost) anywhere! This is a firm family favourite - the potatoes are always more firm than roast potatoes and more buttery and garliky than new potatoes.

Rinse the potatoes and pat dry.

Chop the garlic.

Gently melt the butter in a wide based saucepan.

Keeping the hob down low, place the potatoes and garlic in the pan with the melted butter and toss until well covered. Season with salt and pepper.

Cover the potatoes with greaseproof paper, tucking it in tight over top of them. Place the lid on the saucepan and cook over a low heat for approx. 30 mins.

Shake the pan frequently to turn the potatoes and stop them sticking to the pan. Cook until golden brown. Test with a knife to check they are cooked through. Delicious served as a side dish or as part of a tapas selection.
