Strawberry & Cream Cupcakes

these went down a treat at my neice‘s birthday party, I was requested to make pink cakes but you can stick to traditional white cream icing.

Preheat the oven 160c. Line a cake pane with cupcake cases.

Put all the ingredients (except the strawberries, cream and icing sugar) in a mixer and mix until it‘s really light and fluffy.

Put heaped teaspoons of the mixture into the prepared cases and bake in the oven for 15 minutes until spongy or do the knife test. (stick a knife in if it comes out clean it‘s good)

Let the cakes cool down. Whilst they are cooling, in a bowl whisk the cream and the icing sugar until fluffy and like whipped cream. the either spread or pipe it onto the cakes (i added pink food colouring as requested by the birthday girl)

Half the strawberries and place onto the cakes, and serve.

if you haven‘t got a cake pan, I use the silicone cake cases and then put paper cake cases inside them.

  • 6 good size strawberries
  • 270ml Double cream or Whipping cream
  • 5 tbsp Icing sugar
