Make a simple syrup by combining the sugar 300ml water in a saucepan and heat gently on a medium heat until the sugar has completely dissolved. Leave it to cool.
Puree the strawberries in a blender with 150ml water.
Use a little pastry brush to paint a syrup coating around the rim of each glass. Dip the rims of the glasses in the hundreds and thousands. Leave to dry.
Once the syrup has cooled, in a large pitcher, combine the strawberry puree, the syrup and the freshly squeezed lemon juice.
Add 1 - 2 pints of cold soda water, according to taste.
Fill each glass with some ice cubes and pour over the strawberry & lemon juice. Garnish with fresh strawberries and lemon slices if so desired.
