A delicious fruity cocktail like this is sure to quench your thirst on a summer's evening and impress your guests at the same time.
In a large bowl, use a stick blender to purée eight of the strawberries.
Crush the mint leaves with lemon juice and dissolved sugar using the end of a rolling pin. Add the strawberries to the mix.
Mix in the Bacardi rum and add some ice cubes.
Slowly pour in the beer and mix gently to combine with the other ingredients.
Serve over ice in tumbler glasses, garnished with the two remaining strawberries quartered as a garnish.
With beer cocktails its important not to shake them, as this causes the beer to foam vigourously and then loose its fizz.
