This also works with redcurrants as I discovered when my daughter came in with a bowlful she'd pulled off the bush! I suspect it would taste fab with 200g of any fruit.
Preheat the oven to GM4 (180 degrees) and grease a large 20cm square cake tin
Put the flour,eggs, vanilla extract, margarine and sugar into a larger bowl. Mix with an electric hand mixer for 5 mins until it looks thick, pale and creamy.
Starting with by spooning a layer of cake mixture across the bottom of the tin. Then add a layer of strawberries, repeat this ending with a layer of cake mix. Spread flat with a spatula or back of a spoon.
Bake in the centre of the preheated oven for approximately an hour until browned, firm to touch and a skewer comes out clean.
Allow to cool before removing from the tin
