Strawberry Cheesecake Breakfast Bake recipe

I made this recipe using strawberries I received for free as a member of the Orchard program at Tesco.

Preheat oven to 175 degrees C.

Cut the strawberries into medium-sized pieces and remove the stems and greens.

Combine porridge oats, flour, baking powder and salt in a mug, ramekin or small bowl. (Make sure that whatever dish you use is oven-safe.

Combine milk, quark or soft cheese, honey or syrup, and vanilla in a separate container.

Add the wet ingredients to the dry ingredients and mix until well combined. Once fully mixed, gently fold in the cut strawberries (be careful not to mash them up too much).

Bake for 20 minutes or until no longer liquid in the middle. (It‘s all right if the edges or top go just slightly crisp.)

Any kind of milk can be used - including dairy substitutes like soya, almond or coconut milk. This recipe is great topped with clotted cream, whipped cream, ice cream, or your favourite sweet syrups or sauces. It‘s also great with a bit of jam or fresh-cut fruit (more berries or sliced banana work great). You can even sprinkle on some demerara sugar or hundreds and thousands!
