A friend gave me this recipe as something nice and easy for the weekend. Originally you should make the base yourself, but as I always have one from Tesco (for emergencies!) I‘ve decided to take the easy way :)
Cut strawberries into smaller pieces and mix with 3 tbsp of cornflower. You might want to add some sugar (if you like things really sweet).
Whip egg whites till they‘re stiff, add icing suger spoon by spoon, mixing all the time to make a meringue. At the end add 2 tsp of conrflower.
Spread strawberry jam onto the pastry base. Next, put strawberries in and spread the meringue on top.
Bake for 20 minutes in 180C. Leave to cool completely befor cuting
